Among Iran’s processed pistachio products, Iranian Green Peeled Pistachio Kernel holds a distinctive commercial position due to its natural color, high purity, and specialized application in premium food industries. This product is obtained from pistachios harvested before full maturity, as the chlorophyll concentration in the kernel is higher at this stage and its green color is better preserved after processing. After the hard shell is cracked, the thin skin covering the kernel is also removed through a peeling process, producing a smooth-surfaced product with a bright green color and dense texture.

Green Peeled Pistachio Kernel is graded according to color intensity and uniformity, visual condition, breakage percentage, kernel size, moisture content, and purity level. Darker and more uniformly green grades have the highest export value. Unlike in-shell pistachios, this product is not sized based on Count per Ounce; instead, grading is determined according to kernel dimensions, cut type, and processing grade.

The principal production areas for Iranian Green Pistachio Kernel are located in Kerman Province, particularly Rafsanjan, Anar, Zarand, Sirjan, and Shahr-e Babak. Yazd, Razavi Khorasan, and Semnan are also important production regions. At YAR DIAMOND NUTS CO., the product undergoes shelling, peeling, optical color sorting, moisture control, metal detection, and final inspection before packing. Green Peeled Pistachio Kernel Export is mainly directed to Italy, Germany, France, Japan, South Korea, China, the United Arab Emirates, and GCC countries, where it is widely used in chocolate, ice cream, confectionery, and luxury food products.
